Love is an Herb Garden

by Maryse
(Abilene, TX)

My love for herbs began in culinary arts school. I was attending the Art Institute and, to save money, our class began growing our own herbs to use in our dishes. I loved cultivating the garden, and I loved the way the fresh herbs tasted, as opposed to the store bought kind.

I had moved into an apartment near school that had a lovely fenced in area in the back. It was perfect for a garden, and since I loved the herb garden at school so much, I decided to make my own at home.

I began by planting parsley, dill, and thyme. I chose these because these were my favorite herbs to cook with. They are also some of the easiest to grow. I was in love with my little cottage garden. Almost every night I would prepare recipes that could use my herbs.

I started adding more herbs to my garden. I added marjoram, oregano, and basil. I also added lemon thyme and mint. Every time I cooked, I would use different herbs from my garden. I can not describe how much it improved the flavor of my everyday dishes.

Not only does it greatly improve flavor in foods, but an herb garden is very easy to grow. It really needs only minimal supervision if it's planted right.

I originally wanted to plant a knot garden, with woven together herbs, but it really just seemed too complicated. My small herb garden does just the trick, and even though it's not huge or complex, I love it. I plan on expanding my herb garden into an herb, fruit, and vegetable garden.
